Passover Fish Curls

Serves 6

Ingredients:

  • 1 lb fillet of sole, cut into long, thin strips
  • Oil for frying

Crisy Coat Batter:

  • 2 tbsp Passover cake meal
  • 6 tbsp Passover potato starch
  • 1/2 tsp salt
  • 1 tsp pepper
  • 1 tbsp paprika
  • 1 tsp lemon juice
  • 1 tbsp oil
  • 1 egg, beaten
  • 1/4 cup water

Zesty Cocktail Sauce:

  • 3/4 cup ketchup
  • 3 tbsp prepared horseradish
  • 1/8 tsp pepper
  • 1/2 tsp salt
  • 2 tbsp lemon juice
  • 1 tsp dehydrated minced onion
  • 1 clove garlic, minced
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 1 tsp sugar

Directions:

1. Batter: Preheat oven to 400? F. Sift dry ingredients. Mix well. Add remaining ingredients and blend until smooth.  Heat oil. Curl fish strips on fork and dip into batter. Drop into hot oil. Deep fry until golden brown (2-3 minutes). Place on a foil lined cookie sheet and bake for 20 minutes. Serve with zesty cocktail sauce.

2. Sauce: Combine all ingredients and mix well. Chill thoroughly. Serve over Fish Curls.
