Potato Cholent

Ingredients:

  • 12-15 medium potatoes 
  • 2 medium onions, grated 
  • 3 eggs, beaten
  • 1-2 tsp salt
  • pepper
  • 1/2 cup matza meal 
  • some chicken soup mix (optional)
  • 2 tbsp oil
  • flanken (and/or chicken), seasoned with paprika, garlic, and pepper

Directions:

1. Grate potatoes into cold water and strain. Mix potatoes with grated onions, eggs, salt, pepper, matza meal, and chicken soup mix if desired.

2. Grease bottom and sides of pot with oil. Pour in some of potato mixture and alternate layers of potato mixture and meat. Cover, put in oven if not using a hotpot, cholent box, or blech, and heat until starting to bake at 350? F; then lower heat to 200? F and leave overnight. If using oven or cholent box, remove lid of pot for last couple of hours in order to have a crusty top.
