Pearl Barley Casserole

- 1/4 lb butter or margarine
- 1/2 lb fresh mushrooms, sliced
- 2 medium onions, chopped
- 1 3/4 cups pearl barley
- 2 3/4 cups chicken broth
- 1 tsp salt
1. Preheat oven to 350? F. Saut? mushrooms in butter or margarine until soft. Remove from pan. Add onions to pan and cook until wilted, about 5 minutes. Add barley and cook until golden. Return mushrooms to mixture.
2. Combine and place mixture in 9 x 13-inch baking dish. Add 1 3/4 cups of the chicken broth and bake covered for 30 minutes. Add remaining chicken broth and bake uncovered for an additional 30 minutes.
